There are hundreds of varieties of Onion grown in the world. According to color, there are red, white and yellow types. Red and white varieties are grown in India. Although, onion is consumed in all the countries of the world, it is cultivated only in some countries. Hence it has export market and export value. Area under onion cultivation in the world is about 20 lake hectares. India has the largest area of about 4 lakes ha. (20%) followed by China about 3 lake ha.
Indian onions has two crop cycles, first harvesting starts in November to January and the second harvesting from January to May. Indian onions are famous for their pungency and are available round the year. Onions are widely used as a chief ingredient in various dishes. It has special qualities, which add to taste and flavor to food and hence it is used all kind of tasty cuisine in world and culinary preparations. In addition to its use in cuisine, it is also relished in raw form with meals. Other than just increasing the taste of the meal, the rich fibers and nutrients of this food are considered to be a remedy to cure a number of ailments.

Onions are sodium, fat, and cholesterol free, and provide a number of other key nutrients. There are trace amounts of Niacin, Pantothenic Acid, vitamin B6, Riboflavin, and Thiamin. Types of Onion
Onions differ in the size, color and taste. Spring onions are grown in warmer climates and have a milder, sweeter taste. Storage onions are grown in colder weather climates and generally have a more pungent flavor and are usually named by their color: Red, White & Yellow. Smaller onions come in many types, such as chives, leeks and shallots.
Though they can be pungent and spicy, red onions are great for eating raw, bringing crunchiness and brightness to a variety of dishes. You might see them all the time, next to the yellow onions on the supermarket shelf, but red onions only make up about eight percent of the onion market in the US.
Many cooks don't know the difference between white and yellow onions. The white versions are somewhat sweeter and cleaner in flavor, but don't store quite as well as yellow onions do.
